Nana Lile’s Coconut Impossible Pie
4 eggs
2 cups milk
½ cup plain flour
½ teaspoon Baking Powder
Pinch salt
125 grams margarine
¾ cup sugar
1 cup desiccated coconut
1 – 2 teaspoons vanilla essence
In large bowl beat together eggs, milk, flour, baking powder, salt and margarine until blended.
Stir in all other ingredients.
Pour into a lightly greased 25cm pie plate.
Bake at 180 until custard is set and top is browned. 35 – 40 mins. Serve hot or cold
