Coleslaw – Like KFC

Ingredients:

  • NOTE: Cabbage, Onion and Carrot measured after they were chopped. It is approximately 1/4 of a large cabbage.
  • 8 Cups Cabbage chopped finely
  • 1/4 cup carrot chopped finely
  • 2 1/2 Tablespoons Onion chopped finely
  • Dressing:
  • 1/2 Cup Mayonaise
  • 1/3 Cup Sugar
  • 1/4 Cup Milk
  • 2 1/2 Tablespoons Lemon Juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon Pepper
  • 1 1/2 Tablespoons Cider Vinegar
  • 1/4 Cup Buttermilk (3/4 teaspoon Lemon juice & 1/4 Cup Milk, let sit for 10 mins)

The vegetables need to be chopped as finely as a grain of rice. To do this I use a Kmart Pull Chopper. These choppers are amazing. I use them for all kinds of things, including whipping cream, chopping onions, chilis etc. I will put a picture of this machine at the bottom.

Whisk the dressing ingredients in a bowl together. Note I have added a substitute for Buttermilk as it is not so easily found in New Zealand.

Chop the vegetables, and mix dressing together gently with vegetables.

This Coleslaw tastes much better the next day. Put it in the fridge and stir occasionally to combine. It will keep in your fridge for 3 days
