Lemon Chicken

1.25kg chicken breast. Cut into strips
1 cup cornflour
½ cup plain flour
2 eggs ( beaten with 2 tablespoons water and pepper)
 

Lemon Sauce
½ cup lemon juice
2 teaspoon cornflour
2 tablespoons brown sugar
1 ½ cups brown sugar
2 teaspoons chicken stock
2 tablespoons honey
2 teaspoons root ginger
 

Combine all sauce ingredients in a pan, stir over low heat until sauce boils and thickens.

Beat egg with water and salt and pepper, add chicken to this and mix thoroughly. Put cornflour and flour in separate bowl,  and mix well.  Add chicken to flour mix in small batches, covering thoroughly.
Shallow fry.  Drain on paper.  Spoon sauce over top and garnish with thinly sliced lemon.
