Scotch Fillet

2.8kg of Scotch Fillet = 1 1/2hours
Use uncovered grill dish
Put slices of kiwifruit over meat and under meat for 2 – 4 hours.
Take kiwifruit off and discard.
Pre-heat oven to 200, do not use fan.

Add two tablespoons clarified butter, 1 cup water and sprinkle meat with Soy sauce and Worcester sauce.
Baste every 15 minutes with sauce, and turn every ½ hour.  After 1st turn add more sauces.
Strain off any fat.  Thicken sauce to make gravy.
