    Jon’s Curry

    We have renamed this, as Jon was the first of us to try the recipe. Very Easy!

    2 Tbsp Oil
    1 Onion, Diced
    3 Cloves Garlic, crushed and diced
    1 tsp Ground Ginger
    1 tsp Curry Powder
    2 tsp Cumin
    1 tsp Turmeric
    A very small shake of Chili Flakes, but you can add more if you like it hotter.
    1/2 tsp Himalayan pink salt
    500 – 600 grams chicken diced. We used Chicken Breast, but thighs would be great too
    1 can Diced tomatoes
    3 large handfuls of Spinach

    Heat oil over a medium heat and saute the onions for 3-5 minutes until soft
    Add garlic, ginger, curry powder, Cumin, Turmeric, Chili Flakes and salt. Stir this for about one minute, until you smell the fragrance of the curry.

    Adjust the heat a little higher, and add the chicken. Brown on all sides, then add your tin of tomatoes.

    Stir to combine, reduce heat, and simmer for 30 minutes.

    We added the spinach for the last 5 minutes.

    Served with steamed rice.

    Recipe easily doubles
