    Tater Tot (Potato Gems) Mexican Casserole – Crock Pot

    INGREDIENTS

    1 kg lean beef mince
    1 diced onion – red or white
    3 Tablespoons Ketchup
    1 Tablespoon Worcestershire Sauce
    1 Tablespoon HP Sauce
    2 teaspoons Garlic
    1 diced capsicum
    1 pkt taco seasoning mix
    1 can diced tomatoes
    1 bag of potato gems/tater tots
    3/4 cup grated cheese (We used Mozzarella)

    Sour cream or plain yogurt to serve.

    INSTRUCTIONS

    Place raw beef mince in slow cooker (no need to pre brown)
    Add next 8 ingredients and stir to combine

    Cook on low for 4 – 5 hrs, I then strained off any excess liquid before adding the gems

    Add a bag of frozen potato gems on top of mince and return to cooking on low for 2hrs more

    Half an hour before serving top with grated cheese and continue cooking until cheese melted.
    I kept lid on for 15 minutes with cheese, then took lid off for 15 mins.
    I blasted the cheese with the blow torch to brown it up. Or you could brown under your grill if your crock
    is oven proof.

    Serve with a dollop of sour cream or plain yoghurt. We served ours with mashed avocado and cherry tomatoes mixed
    with lime juice.
