Crock pot – Chicken and Cashew Nuts

Crock pot Cashew Chicken

Ingredients:
1 kg of chicken breast or thighs, cubed (no skins)

1/4 cup of plain flour

1/2 teaspoon of black pepper

Sauce:

1/2 Teaspoon of chilli flakes
4 tablespoons of rice wine vinegar
4 Tablespoons Tomato sauce/Ketchup
1/2 cup soy sauce
1 teaspoon of fresh grated ginger
4 cloves crushed garlic
2 tablespoon of brown sugar
1 red capsicum
1 cup carrot sticks
1 cup sliced cabbage
1 cup sliced bok choy
1 red or white onion

1/2 cup of unsalted cashew nuts (dry roasted)

Directions:
Combine flour and pepper in large bag. Add chicken. Shake to coat with flour mixture. Heat some oil in pan over medium-high heat. Brown chicken about 2 minutes on each side. I did this in 4 batches.

Place chicken in crockpot.

Combine chilli flakes, rice wine vinegar, tomato sauce, soy sauce, grated ginger, crushed garlic, and brown sugar in bowl and stir.  Pour our over chicken.

Add Onion or capsicum and whatever other veges you want. Cook on LOW for 3 hours. after 3 hours I added the carrot sticks, cabbage and bok choy.  Cook another hour on low.  Add cashews and stir. Serve over rice. Makes 4-6 servings.

Cooked for 4 hours on low in my crock pot.

You can add beans or broccoli, or any vegetables that you have.
