Pork Meatballs Stroganoff

Ingredients:

1kg Pork Mince

3 Slices of Bread (cubed)

1 Egg (beaten)

1 teaspoon Salt

1/2 teaspoon Pepper

1 teaspoon Nutmeg (used in two places)

1 teaspoon Allspice (used in two places)

1/4 Cup Chopped Parsley

2 teaspoons Smoked Paprika (used in two places)

500 grams Mushrooms (quartered)

1 Onion (grated)

2 Cloves Garlic (crushed)

1/2 Cup Sour Cream or cream

4 Tablespoons Butter

4 Tablespoons Flour

3 Cups Stock (any flavour)

Method:

Place the diced bread in a bowl. Add 1/2 of the onion grated (and any liquid) to this. Mix in, and add a little milk if needed to make wetter.

Combine pork, Beaten Egg, Parsley, Salt, Pepper. 1/2 teaspoon of Allspice, 1/2 teaspoon of Nutmeg and 1 teaspoon Smoked Paprika. Roll into Balls, and fry in oil until brown all over. Remove.

In the same pan sauté the quartered mushrooms, garlic, and the other half of your onion for around 8 – 10 minutes.

Add a little of the stock if needed.

After the 10 minutes add the butter. Wait until the butter has melted; then add the flour, 1/2 teaspoon allspice, 1/2 teaspoon nutmeg, 1 teaspoon smoked paprika. Slowly add the rest of the stock in portions until thickened.

Add the meatballs back in, and simmer gently for 10 minutes

Gently stir in the sour cream or cream. Simmer another 2 minutes.

Serve over Noodles or Rice.

NOTES: It was too much mushroom for me, so next time may cook those on the side, and serve them in the other portions
