Peel 1 kilo of potatoes and cube, or use small new potatoes.
Simmer for 5 – 9 mins in boiling salted water, Drain and place in a bowl.
Dressing:

- 5 tbsp olive oil
- 1/4 cup lemon juice
- 1 tbsp lemon zest (1 large lemon)
- 1 large garlic clove, chopped finely
- 1 tsp Dijon mustard, or whichever mustard you have
- 1 teaspoon liquid honey (or melt ordinary honey)
- 3/4 tsp salt and pepper
- 1 small handful of parsley
Mix all the above with your stick mixer while the potatoes are simmering
When the potatoes have cooked and drained, add them to a bowl with half of the dressing mix. While they are still warm they will soak up the marinade.
When cool, mix again and add the other half of the dressing to serve.
I added spring onions, and red onions diced small. Next time i think toasted nuts may be nice in this
