The juice from can of Pineapple pieces
3 Tablespoons Tomato sauce
½ teaspoon Worcester Sauce
1 Tablespoon Soy sauce

½ cup water
Mix the above ingredients in a glass bowl. Microwave for 3 minutes, then thicken with the cornflour. Continue cooking until thicker (about 2 more minutes)
4 teaspoons cornflour – mixed to a paste with a little water to thicken.
Set the sauce aside
Take the Pork out of the fridge and add 5 Tablespoons of Cornflour to the bowl. Stir well, it should all be white. Let sit for 5 minutes. You may need to dust with more cornflour before fryng.
Using about half a cup of oil, fry your pork in 3 batches for around 3 mins each batch
Let it sit on a wire rack.
Add more oil, and heat till hot, fry all the pork at once this time, for another 2 mins. Note (I then sat the pork in the air fryer on very low until I needed it. But next time I think I will try cooking the pork in the air fryer, rather than frying it. Possibly spraying with an oil spray.
While frying the pork, start your onions, ginger and garlic in a wok pan for about 3 minutes.
Add all your other Vegetables and Pineapple and cook for about 5 minutes.
Add the Pork
Add the sauce
Cook for a couple of minutes
I add in a bag of crunchie noodles at this stage.
Mix all together and serve.
Options: Leave out the noodles and serve over rice
You could try adding toasted peanuts
