Air Fryer Chicken Bits

    Marinade
    500 grams chicken thighs (cut into bite sized pieces)
    1 tsp fresh ginger (minced)
    1 tsp fresh garlic (minced)
    2 tsp Soy Sauce
    1 tsp cider or rice vinegar

    To Air Fry Chicken
    1 Egg (beaten)
    2/3 cup corn flour

    Sauce
    1/2 cup chicken stock
    2 tbsp soy sauce
    2 tbsp tomato sauce
    2 tsp cider or rice vinegar
    2 tsp brown sugar
    2 tsp corn flour
    2 tbsp oil
    1 tsp fresh ginger (minced)
    1 tsp fresh garlic (minced)
    1 tsp chili flakes

    Garnish
    Sesame seeds
    sliced green onions

    1. Add Chicken and all marinade ingredients to a bowl. Mix to coat, and sit for 30 mins

    2. Preheat Air fryer for 10 minutes at 200 C

    3. Beat the egg in a small bowl. Put the Corn flour in a shallow bowl.

    4. Dip the chicken pieces in the egg and then coat them in the corn flour. Shake off Excess

    5. Grease the Air fryer basket using cooking spray or brush with oil

    6. Place the chicken in a single layer in the Air Fryer. Air Fry chicken at 200 C for 12 to 16 minutes. Until the internal temp of the chicken is 73 C.

    7. While the chicken is cooking make the sauce. Whisk chicken stock, soy sauce, vinegar, brown sugar, corn flour, and tomato sauce together in a small bowl.

    8. Heat oil in frypan to a medium high heat. Add the ginger, garlic and chili flakes. Cook until fragrant.

    9. Give the sauce a stir and add it to the fry pan and cook until this thickens.

    10. Toss the air fried chicken in the sauce to coat. Garnish with the sesame seeds and green onions. Serve warm.

    Cook your chicken in batches, not too much at once.
    If you want a sweeter sauce add another teaspoon of sugar

    Serve with rice
