Chicken Pieces with Green Ginger Wine

Chicken Pieces

½ cup green ginger wine
1 clove garlic (crushed)
50 grams butter
1 tablespoon soy sauce
½ teaspoon grated lemon rind
2 cups apple juice
1 teaspoon fresh ginger or powder
3 tablespoon flour
3 tablespoon oil
½ tablespoon cornflour mixed with water
½ teaspoon chopped chives

Marinate chicken pieces in apple juice, wine, ginger and garlic. For at least two hours, preferably overnight.
Remove chicken, pat dry and coat with flour.
Brown chicken with the butter and oil.  Transfer to a casserole and pour marinade over.  Add soy sauce.
Place in moderate oven (350) for approximately 45 mins.  Thicken with cornflour, garnish with lemon rind and chives.
