Banana Muffins
3 Ripe Mashed Bananas (about 1 1/2 cups)
60 grams Melted Butter
1/4 cup oil
½ cup Sugar
1/2 Cup Brown Sugar
2 Eggs
2 cups Flour
1/4 Cup Buttermilk
1/2 teaspoon salt
1 Tablespoon Vanilla Essence
1/2 tsp baking soda
1 1/2 tsp baking powder
Preheat oven to 220 degrees. Mash the bananas, add the melted butter, oil, sugars, eggs, vanilla and buttermilk, mix to combine. Sift in the flour, baking powder, baking soda
Combine and spoon into muffin tins. Makes 12 big muffins or 36 baby muffins.
Cook for 8 minutes at 220 Degrees Celsius, then turn down to 180 Degrees Celsius for 9 minutes.
Test with a skewer to see if done, and sit on a rack
