Seafood Chowder

500 gram white fish
2 cups marinara mix
2 tablespoons butter
2 potatoes peeled and cubed
1 cup water
½ cup frozen peas
2 tablespoons butter
1 – 2 cups milk
½ cup water
1 onion chopped
1 cup chicken or fish stock
½ cup corn kernals
5 tablespoons flour

Put fish and marinara mix in shallow pan with 1st amount of water. Cover and cook on low heat until fish flakes.  Drain when cooked and reserve liquid.

In another pot melt 1st butter, add onion and potato.  Cook over moderate heat for 2 – 3 minute.  Add water and stock.  Cover and cook for 10 mins until vegies are cooked, then add peas and corn and cook for 1 min.

In the pot which the fish was cooked in melt the 2nd lot of butter, add flour. Mix to a roux. Then add milk slowly. Stir well and bring to boil.. Add vegetable liquid and reserved fish liquid and bring to boil, stirring constantly.  Add vegetables and flaked fish and adjust seasoning.  Thin with milk if necessary. Sprinkle with Parsley.

I sometimes add chopped leaks in with the potatoes.
