Kathryn’s Candied Peanuts

2 cups blanched peanuts
1 1/4 cups sugar
1/2 cup water
1 tsp sea salt
1 tsp ground cinnamon

1. In a wide, heavy frypan, mix the peanuts with the sugar and water. Cook the ingredients over moderate heat. Stir frequently, until the liquid dries up (this took me ages)
2. Using a metal spoon, keep stirring and scraping the pan over a low heat until the peanuts are golden brown. (again – this took ages)
3. Remove from heat and then sprinkle with salt and cinnamon.
4. Toss nuts for a further 5 mins as they cool. (yer right – make that a couple of mins as by now you’re sick of stirring!)
