Shona’s Mock Chicken

Mock Chicken – Shona

1 large onion (chopped finely)
4 teaspoons mixed herbs
2 cups grated cheese
2 heaped tablespoons flour
1 ½ tins tomatoes
4 eggs beaten
2 tablespoons butter
½ teaspoon salt

Cook onion in butter until clear. Do not brown. Add flour and mix to a roux sauce with the juice of the tomatoes. Add tomatoes. Chop tomatoes up with your spoon while stirring. Add herbs and salt. Add beaten eggs. Cook for about 1 minute being careful not to curdle. Add cheese. Stir until melted. Good fresh, but can Freeze in containers.
Use in sandwiches, rolls or with crackers.
