Chocolate Pikelets – Nana
1 tablespoon melted butter
1 large egg
½ teaspoon vanilla
½ cup sugar
½ cup milk
1 cup flour
1 – 2 tablespoons cocoa
½ teaspoon baking soda
1 teaspoon cream of tartar
Pinch salt
Melt the butter and put in a bowl big enough to mix all the ingredients ( 2 litre glass jug). Add the egg, vanilla, sugar and milk and beat till well mixed.
Sift in flour, cocoa, baking soda, cream of tartar and salt.
Use extra cocoa for a darker colour and flavour.
Whisk or beat in very briefly, stop mixing as soon as all combined.
Heat a heavy saucepan or electric frypan. When hot rub surface with a little butter on papertowel.
Drop dessertspoon full of mixture off the tip of spoon. Turn as soon as first bubbles appear on top. Serve with whipped cream and jam.
