Isabel’s Apple Pie

Flakey Pastry
8 peeled and cored, thinly sliced apples
1 tablespoon lemon juice
1 cup sugar
3 tablespoons cornflour
1 ½ teaspoon cinnamon
¼ teaspoon ground ginger
2 tablespoons butter

Place apple slices in large bowl. Sprinkle with lemon juice, sugar, cinnamon, ginger and cornflour. Stir to blend well. Set aside
Roll out pastry for bottom crust. Place apples in a pastry shell, mounding a little in the centre. Pour any remaining juice from bowl then dot with butter. Roll out pastry top and cover pie. Brush top lightly with milk or egg. Bake 1 hour.
