Double chocolate biscuits
125 grams butter (chopped and softened)
1 teaspoon vanilla
1 ¼ cups soft brown sugar
1 Egg
1 ½ cups plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 tablespoon cocoa powder
1 cup chocolate chopped into small pieces
Preheat oven to 170, and grease or line a tray with baking paper
Beat butter, sugar, vanilla and egg until smooth. Don’t overbeat. Sift dry ingredients and stir into butter mix, then mix chocolate in.
Roll into heaped teaspoon sized balls and place on trays. Press lightly with fork. Allow space to spread. Bake for 8 mins, remove and stand for 5 mins before transferring to wire rack.
