    Broccoli, Cauliflower and Cheese Soup – Instant Pot or Crock Pot Express

    Ingredients
    2 Tablespoons Oil
    1 Onion – Diced
    2 Cups carrots – diced
    4 Cloves Garlic – Finely Diced
    4 Cups Chicken Stock
    3 Cups Broccoli – Diced
    3 Cups Cauliflower – Diced
    1 teaspoon seed mustard
    1/2 teaspoon Smoked Paprika
    1/4 teaspoon Ground Turmeric
    3 Cups Tasty Cheese – Grated
    Salt and Pepper to taste

    Press the Saute button on the Pressure Cooker, wait until it is hot, and put the oil in. Add the onion and carrots and cook for about 3 minutes.

    Add the garlic, cook for 1 minute. Then add the chicken broth.

    Add the broccoli and cauliflower. Put the lid on the pressure cooker, with steam set to off. and Cook at high pressure for 8 minutes.

    Once finished, do a quick release, open the lid and turn the pressure cooker off. Add in the Paprika, turmeric, and mustard. Stir until all mixed in.

    Add the grated cheese and stir, mixing well until it is all melted. Once melted season to taste.

    I put my stick mixer in the pot at this stage, as it makes a great creamy soup once mixed in.

    NOTE: The first time I made it I did not have enough cauliflower, so substituted with Leeks instead.
