Rice Pudding – Express Crock Pot or Instant Pot

    Ingredients
    • 1 cup Uncooked Rice (Arborio or any short grain)
    • 2 cups Milk
    • 1 cup Water
    • ½ cup Sugar
    • 1 tsp Ground Cinnamon
    • 1 tsp Vanilla Essence
    • A pinch of Salt
    • 1 Tbsp Butter

    Instructions

    In the inner pot of your Instant Pot/Express Cooker combine the rice, milk, water, sugar, vanilla, cinnamon, and salt.
    1. Mix well, making sure there are no lumps of cinnamon.
    2. Close the lid, lock it into its position. Press MANUAL (pressure cooking) and adjust the time to 10 minutes.
    3. When the cooking cycle is finished, wait about 10 minutes before releasing the pressure manually.
    4. When the pin has dropped, open the lid and give it a good mix. Now stir in the butter.

    Notes:

    The rice pudding may appear liquid at first but will thicken once cooled.
    If you like your rice harder, you can cook it for 7 minutes only, if softer then 10
