Potato Salad – Penny

A GRANDMOTHERS POTATO SALAD – SWITZERLAND

This was given to me by Penny, and I think it came from her friend’s Grandmother In Switzerland

10 – 12 Red Skinned Potatoes, peeled boiled whole
½ to 1 cup finely chopped onion (white or red)
¾ cup vegetable or peanut oil (not olive oil)
¼ cup apple cider vinegar
1 Tablespoon Aromat
1/8 teaspoon Pepper
1 teaspoon Oregano
2 teaspoon finely chopped parsley
¼ teaspoon Basil
1/8 teaspoon Dry Mustard powder

Cool the cooked potatoes to just warm/room temperature (do not cool in the refrigerator)
Cut potatoes into slices, and add chopped onions
Mix remaining ingredients in a blender and pour over potatoes.
Toss gently
Serve while at room temperature, or refrigerate until ready to serve.

This works best if the dressing is left to soak potatoes for at least 2 hours before serving

The Aromat is usually available in the international section of any supermarket. But I have put a picture below so you can see what the packet looks like. Sometimes in a small container or envelope.
