Beetroot Dip
1 Packet of Pre Cooked Whole Beetroot. Available in vegetable section at supermarket. Drained, dried with paper towel, and squished with a fork
2 x cans Chick Peas (Rinsed and Drained)
Tahini – 1 teaspoon
lemon juice – 1 teaspoon
4 Tablespoons of Balsamic reduction
a dash of Olive Oil
Blend all together in mixer and chill.
If you can’t buy balsamic reduction you can make your own.
Bring 1 cup of balsamic vinegar to the boil, then simmer until reduced by half, or a little longer if you want it thicker.
