Mulled Wine

Mulled Wine
1 Bottle of Red wine (I used cheap Merlot)
1 Orange or 2 x Mandarin’s
1 Lemon
1 tsp Ground Nutmeg, or grated whole nutmeg
1 tsp Ground Ginger
5 whole cloves
1 Stick cinnamon
½ cup sugar
2/3 cup brandy (miss out if you have none)

Cut large sections of Peel off the Orange, Mandarin’s and Lemon using a potato peeler.
Put the sugar in a large saucepan over a medium heat, add the pieces of peel and squeeze in the juice of the orange or Mandarin’s.
Add the cloves, cinnamon stick, nutmeg and ginger.
Stir in just enough red wine to cover the sugar
Let this simmer until the sugar has completely dissolved, then bring to boil. Rolling boil for 4 – 5 minutes, or until you have thick syrup.
When the syrup is ready, turn the heat down to low and add the rest of the wine. Gently heat the wine, and it is ready to serve after about 5 mins.

Strain the Mulled wine through a sieve, and serve. I bottled the left over wine, and reheated it the next night.
