Banana Muffins in Pie Maker

Our Pie Maker, makes 8 small pies. Single recipe makes about 12

Single:

3/4 Cup Self Raising Flour (3/4 teaspoon Baking Powder)

1/4 teaspoon Baking Soda

1/4 teaspoon Salt

1/2 teaspoon Cinnamon

1 – 2 Bananas Mashed (about 1/2 cup)

1/3 cup Brown Sugar

1 Egg

50 grams Butter melted

1/2 teaspoon Vanilla Essence

2 Tablespoons Buttermilk (add a dash of lemon juice to milk to get buttermilk)

Double:

1 1/2 Cups Self Raising Flour (1 1/2 teaspoon Baking Powder)

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

1 teaspoon Cinnamon

3 – 4 Bananas Mashed (about 1 cup)

2/3 cup Brown Sugar

2 Eggs

100 grams Butter melted

1 teaspoon Vanilla Essence

1/4 Cup Buttermilk (add a dash of lemon juice to milk to get buttermilk)

Large Bowl:

Whisk flour, Baking Powder, Baking Soda, salt, cinnamon, and brown sugar

Small Bowl:

Whisk mashed banana, Egg, Melted Butter, vanilla and buttermilk.

Add wet to dry, and gently fold. Do not overstir, combine until flour just disappears.

Grease the pans in the pie maker. Add around one soup spoon of mix to each pan. Cook around 7 mins. Cool and freeze
