    Sweet and Sour Pork Belly – Air Fryer

    1 tablespoon cornflour
    2 tablespoon water
    2/3 cup pineapple juice
    1/3 cup sushi vinegar
    1/3 cup brown sugar
    3 tablespoons ketchup
    1 tablespoon soy sauce

    Put all ingredients except water and cornflour in pot. Bring to boil. Mix water and cornflour in cup so no lumps and pour into pot. Keep cooking on high for one minute and bring down to medium. Keep cooking until consistency you like. This sauce is quite tart so add more sugar or honey if you like.

    For pork, put pork belly in air fryer on 180 degrees – I did 15 mins and then 5 mins and checked, it will depend on the size of your pork.

    Then cut pork belly into cubes and mix into sauce. I added some green beans and served over rice.
