Pat’s Marshmallow

2 tablespoons gelatine in 1 cup of cold water
Add 1 cup boiling water, 2 cups sugar, 1 teaspoon vanilla essence
Boil for 20 mins, stirring occasionally

Cool then beat until really thick.  Add pink food colouring when beating.

Makes 1 sponge roll tin or 12 cones.
Spread into wet tin and cut. Put coconut or icing sugar on when cool.
Or pipe into ice cream cones for children.  Sprinkle with 100’s and 1000’s
