{"id":858,"date":"2019-02-21T11:43:14","date_gmt":"2019-02-20T22:43:14","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=858"},"modified":"2019-02-21T18:20:01","modified_gmt":"2019-02-21T05:20:01","slug":"jon-foccacia-bread","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=858","title":{"rendered":"Jon &#8211; Foccacia Bread"},"content":{"rendered":"<p><strong>Focaccia Bread<\/strong><\/p>\n<ul>\n<p>Makes 1 x 28cm x 5cm round loaf<\/p>\n<p>800 grams plain flour<br \/>\n550 ml Luke-warm water<br \/>\n10 grams dried yeast<br \/>\n10 grams salt<br \/>\n4 cloves garlic, peeled and finely sliced<br \/>\n1 tablespoon Rosemary, finely chopped<br \/>\n\u00bd cup olive oil<br \/>\nFlaky seat salt<\/p>\n<p>1.\t Place flour, water, yeast. Salt, garlic, rosemary and 2 tablespoons of olive oil into a mixer. Mix on low speed for 15 mins using a dough hook.  Or do by hand.<\/p>\n<p>2.\t Turn out onto another large mixing bowl, greased with olive oil.  Punch down firmly on dough with your fingertips.  This will add more air to assist in the proving of the dough.<\/p>\n<p>3.\t Cover Dough with cling wrap and set aside in a warm place until doubled in size.<\/p>\n<p>4.\t Liberally grease a 28cm oven-proof frying pan (or oven proof dish). Tip the proved dough into the frying pan, drizzle with olive oil and punch down firmly with your fingertips all over the surface of<br \/>\n         the dough.  Sprinkle a little flaky sea salt over the surface of the dough.  Return to a warm place and allow to prove for another 30 to 45 minutes or until almost doubled in size.<\/p>\n<p>5.\t Preheat the oven to 230 C.  Place the bread in to the oven for 15 to 20 mins or until golden brown.  Remove from oven and allow to cool for 2 or 3 minutes before turning out onto a wire cake rack.<br \/>\n         Drizzle with a little extra olive oil to finish.
