{"id":763,"date":"2016-07-19T21:35:33","date_gmt":"2016-07-19T09:35:33","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=763"},"modified":"2016-07-20T09:04:24","modified_gmt":"2016-07-19T21:04:24","slug":"padis-masala-curry-spice-mix","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=763","title":{"rendered":"Padi&#8217;s Masala Curry Spice Mix"},"content":{"rendered":"<p>In a heavy bottomed Pan, add the following according to size:<\/p>\n<p>This makes 3 &#8211; 4 Tablespoons<\/p>\n<p>1\/4 Teaspoon oil (just enough to get a light coating on spices)<\/p>\n<p>3 &#8211; 4 dry red chillies (kashmiri red chili)<br \/>\n7 &#8211; 8 Black Pepper Corns<br \/>\n2 &#8211; 3 inch cinnamon sticks<br \/>\n7 &#8211; 9 cloves<br \/>\n1 teaspoon coriander seeds<br \/>\n1 teaspoon cumin seeds<br \/>\n1 teaspoon channa dal (indian split pea)<br \/>\n1 teaspoon urad dal (indian white lentils)<br \/>\n1\/4 teaspoon nigella seeds<br \/>\n1\/4 teaspoon fenugreek seeds<\/p>\n<p>Fry these on low heat till golden\/reddish brown or when you start smelling the awesome aroma \ud83d\ude42<\/p>\n<p>Let it cool and grind it to a fine powder or crush in your mortar pestle.  Always start grinding with the chilies.<\/p>\n<p>I have used this spice for many things. Add a teaspoon into your rice cooker with rice, or use in mayonnaise.  Sprinkle on top of any dish to add a rich flavour.
