{"id":712,"date":"2016-04-28T18:29:03","date_gmt":"2016-04-28T06:29:03","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=712"},"modified":"2016-04-28T18:30:29","modified_gmt":"2016-04-28T06:30:29","slug":"moroccan-couscous","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=712","title":{"rendered":"Moroccan CousCous"},"content":{"rendered":"<p>Moroccan Couscous<\/p>\n<p>1 \u00bd Cups Couscous<br \/>\n1 \u00bc teaspoon Ground Cumin<br \/>\n\u00bd teaspoon ground ginger<br \/>\n\u00bc teaspoon ground cloves<br \/>\n\u00bc teaspoon ground cardamom<br \/>\n1\/8 teaspoon cayenne pepper<br \/>\n\u00bc teaspoon Coriander<br \/>\n\u00bc teaspoon Allspice<br \/>\n1 Tablespoon Olive Oil<br \/>\n\u00bd Red Onion finely chopped<br \/>\n\u00bd Red Capsicum finely chopped<br \/>\n1 carrot finely sliced into small sticks<br \/>\n3 \u2013 4 dried tomatoes (chopped finely)<br \/>\n1 \u00bd cups chicken or vegetable stock<br \/>\n\u00bd cup orange juice<\/p>\n<p>I ground all the spices together in a mortar and pestle.  Gently toast all the spices over a medium heat for 2 \u2013 3 minutes. Add oil and onion and gently cook for 2 minutes. Add other vegetables, cook for 2 minutes.<\/p>\n<p>Add salt, Pepper, chicken stock and orange juice. Bring to boil.  Add couscous. Remove from heat and cover. Leave for 5 minutes then fluff with a fork.<\/p>\n<p>We also added a couple of floweret\u2019s of broccoli, and stirred in a fresh tomato (chopped) once it was cool, as we like to eat this as a salad.
