Very Easy!<\/p>\n<p>2 Tbsp Oil<br \/>\n1 Onion, Diced<br \/>\n3 Cloves Garlic, crushed and diced<br \/>\n1 tsp Ground Ginger<br \/>\n1 tsp Curry Powder<br \/>\n2 tsp Cumin<br \/>\n1 tsp Turmeric<br \/>\nA very small shake of Chili Flakes, but you can add more if you like it hotter.<br \/>\n1\/2 tsp Himalayan pink salt<br \/>\n500 &#8211; 600 grams chicken diced.  We used Chicken Breast, but thighs would be great too<br \/>\n1 can Diced tomatoes<br \/>\n3 large handfuls of Spinach<\/p>\n<p>Heat oil over a medium heat and saute the onions for 3-5 minutes until soft<br \/>\nAdd garlic, ginger, curry powder, Cumin, Turmeric, Chili Flakes and salt. Stir this for about one minute, until you smell the fragrance of the curry.<\/p>\n<p>Adjust the heat a little higher, and add the chicken. Brown on all sides, then add your tin of tomatoes.<\/p>\n<p>Stir to combine, reduce heat, and simmer for 30 minutes. <\/p>\n<p>We added the spinach for the last 5 minutes.<\/p>\n<p>Served with steamed rice.<\/p>\n<p>Recipe easily doubles<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Jon&#8217;s Curry We have renamed this, as Jon was the first of us to try the recipe.
