{"id":656,"date":"2015-09-16T20:26:47","date_gmt":"2015-09-16T08:26:47","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=656"},"modified":"2015-09-16T20:40:23","modified_gmt":"2015-09-16T08:40:23","slug":"tatertot-potato-gems-mexican-casserole-crock-pot","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=656","title":{"rendered":"Tatertot (Potato Gems) Mexican Casserole &#8211; Crock Pot"},"content":{"rendered":"<p><strong><\/p>\n<ul>Tater Tot (Potato Gems) Mexican Casserole &#8211; Crock Pot<\/p>\n<p>INGREDIENTS<\/p>\n<p>1 kg lean beef mince<br \/>\n1 diced onion &#8211; red or white<br \/>\n3 Tablespoons Ketchup<br \/>\n1 Tablespoon Worcestershire Sauce<br \/>\n1 Tablespoon HP Sauce<br \/>\n2 teaspoons Garlic<br \/>\n1 diced capsicum<br \/>\n1 pkt taco seasoning mix<br \/>\n1 can diced tomatoes<br \/>\n1 bag of potato gems\/tater tots<br \/>\n3\/4 cup grated cheese (We used Mozzarella)<\/p>\n<p>Sour cream or plain yogurt to serve.<\/p>\n<p>INSTRUCTIONS<\/p>\n<p>Place raw beef mince in slow cooker (no need to pre brown)<br \/>\nAdd next 8 ingredients and stir to combine<\/p>\n<p>Cook on low for 4 &#8211; 5 hrs, I then strained off any excess liquid before adding the gems<\/p>\n<p>Add a bag of frozen potato gems on top of mince and return to cooking on low for 2hrs more<\/p>\n<p>Half an hour before serving top with grated cheese and continue cooking until cheese melted.<br \/>\nI kept lid on for 15 minutes with cheese, then took lid off for 15 mins.<br \/>\nI blasted the cheese with the blow torch to brown it up. Or you could brown under your grill if your crock<br \/>\nis oven proof.<\/p>\n<p>Serve with a dollop of sour cream or plain yoghurt.
