{"id":492,"date":"2015-03-18T10:54:22","date_gmt":"2015-03-17T21:54:22","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=492"},"modified":"2015-03-18T10:57:25","modified_gmt":"2015-03-17T21:57:25","slug":"chocolate-chip-cookies-for-st-patricks-day-green","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=492","title":{"rendered":"Chocolate Chip Cookies for St Patrick&#8217;s Day &#8211; GREEN"},"content":{"rendered":"<p><strong>Mint Chocolate Chip Cookies <\/strong><\/p>\n<p>Ingredients:<br \/>\n1 1\/2 cups all-purpose flour, weighed or spooned and leveled<br \/>\n1\/2 teaspoon baking soda<br \/>\n1\/4 teaspoon salt<br \/>\n1\/2 cup butter, melted<br \/>\n2\/3 cup packed brown sugar<br \/>\n1\/3 cup white sugar<br \/>\n1 large egg, room temperature<br \/>\n1 teaspoon vanilla essence<br \/>\n1\/8 teaspoon mint essence<br \/>\ngreen gel food coloring<br \/>\n1 cup good quality semi-sweet chocolate chips <\/p>\n<p><strong>Directions<\/strong>:<br \/>\nSift together the flour, baking soda and salt; set aside. With an electric mixer, beat together cooled butter and sugars on medium speed for a minute or two, until pale and fluffy. <\/p>\n<p>On low speed, add the egg and vanilla extract. <\/p>\n<p>Gradually add the flour mixture just until mixed.<br \/>\nFold in chocolate chips or mix-ins of your choice with a spatula or wooden spoon.<br \/>\nScoop dough into 16 balls (about 2 tablespoons each), cover with plastic wrap and refrigerate for at least an hour, or leave in the fridge over night. <\/p>\n<p>When ready to bake, preheat oven to 350 degrees F. Place dough balls onto waxed paper lined baking trays. <\/p>\n<p>Bake 10-11 minutes, until edges just start to turn crisp but centers are still soft and puffy. Do not over bake. <\/p>\n<p>Cookies will continue to bake while cooling on the hot baking sheet.
