{"id":478,"date":"2015-03-10T18:54:23","date_gmt":"2015-03-10T05:54:23","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=478"},"modified":"2024-05-27T15:28:59","modified_gmt":"2024-05-27T03:28:59","slug":"crock-pot-chicken-and-cashew-nuts","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=478","title":{"rendered":"Crock pot &#8211; Chicken and Cashew Nuts"},"content":{"rendered":"<p><strong>Crock pot Cashew Chicken<\/strong><\/p>\n<p><strong>Ingredients<\/strong>:<br \/>\n1 kg of chicken breast or thighs, cubed (no skins)<\/p>\n<p>1\/4 cup of plain flour<\/p>\n<p>1\/2 teaspoon of black pepper<\/p>\n<p><strong>Sauce:<\/strong><\/p>\n<p>1\/2 Teaspoon of chilli flakes<br \/>\n4 tablespoons of rice wine vinegar<br \/>\n4 Tablespoons Tomato sauce\/Ketchup<br \/>\n1\/2 cup soy sauce<br \/>\n1 teaspoon of fresh grated ginger<br \/>\n4 cloves crushed garlic<br \/>\n2 tablespoon of brown sugar<br \/>\n1 red capsicum<br \/>\n1 cup carrot sticks<br \/>\n1 cup sliced cabbage<br \/>\n1 cup sliced bok choy<br \/>\n1 red or white onion<\/p>\n<p>1\/2 cup of unsalted cashew nuts (dry roasted)<\/p>\n<p><strong>Directions<\/strong>:<br \/>\nCombine flour and pepper in large bag. Add chicken. Shake to coat with flour mixture. Heat some oil in pan over medium-high heat. Brown chicken about 2 minutes on each side. I did this in 4 batches.<\/p>\n<p>Place chicken in crockpot.<\/p>\n<p>Combine chilli flakes, rice wine vinegar, tomato sauce, soy sauce, grated ginger, crushed garlic, and brown sugar in bowl and stir.\u00a0 Pour our over chicken.<\/p>\n<p>Add Onion or capsicum and whatever other veges you want. Cook on LOW for 3 hours. after 3 hours I added the carrot sticks, cabbage and bok choy.\u00a0 Cook another hour on low.\u00a0 Add cashews and stir. Serve over rice.
