{"id":464,"date":"2015-02-27T12:36:04","date_gmt":"2015-02-26T23:36:04","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=464"},"modified":"2015-02-27T12:45:32","modified_gmt":"2015-02-26T23:45:32","slug":"dairy-free-berry-tart","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=464","title":{"rendered":"Dairy Free Berry Tart"},"content":{"rendered":"<p><strong>DAIRY FREE &#8211; BERRY TART<\/strong><\/p>\n<ul>       (Originally From Reality Bytes Cafe in Rangiora)<\/p>\n<p>Ingredients:<\/p>\n<p>Base:<br \/>\n1-\u00bd cups dates (soaked and drained)(Soaked for 1 Hour)<br \/>\n1-\u00bd cups coconut<br \/>\n\u00bc cup cacao nibs (I used Cacao powder instead)<\/p>\n<p>Topping:<br \/>\n2-\u00bd cups raw cashews (soaked and drained)     (Soaked for 4 &#8211; 6 hours, or 1 Hour in Hot water)<br \/>\n\u00be cup of melted raw virgin coconut oil<br \/>\n3 cups berries of your choice<br \/>\nJuice and rind of 2 limes and 1 lemon<br \/>\n1-\u00bd cups dried cranberries (soaked and drained)     (soaked for 1 hour)<br \/>\nDash of sweetener of choice &#8211; my favourite is real maple syrup<\/p>\n<p>Method:<br \/>\nSoak and drain dates, blend well with coconut then add cacao nibs.  Blend again to mix.  Press into a round springform tin 20 cm in diameter.  Place into freezer while you make the topping.<\/p>\n<p>A note about the base: my favourite super easy base is simply dates and coconut.  You can then experiment by adding ground nuts or seeds of your choice.  The cacao nibs gives it a delightful crunch and toasty flavour as well as a super-food boost. <\/p>\n<p>Process cashews and melted coconut oil until smooth.  Add remainder of ingredients and process until smooth and creamy.  Place on top of base and place in freezer or refrigerate until firm. We added fresh Passion Fruit Pulp on the top.<\/p>\n<p>Here is our version, and the picture above is from Reality Bytes.
