{"id":438,"date":"2015-01-22T18:34:56","date_gmt":"2015-01-22T05:34:56","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=438"},"modified":"2015-02-27T12:32:06","modified_gmt":"2015-02-26T23:32:06","slug":"truffles","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=438","title":{"rendered":"Truffles"},"content":{"rendered":"<p><a href=\"https:\/\/debskitchen.co.nz\/wp-content\/uploads\/2015\/01\/download.jpg\"><img decoding=\"async\" src=\"https:\/\/debskitchen.co.nz\/wp-content\/uploads\/2015\/01\/download.jpg\" alt=\"download\" width=\"275\" height=\"183\" class=\"alignnone size-full wp-image-442\" \/><\/a><\/p>\n<p>Gluten Free and Dairy Truffles (Chelsea Winter)<\/p>\n<p>Ingredients<\/p>\n<p>250g Whittaker\u2019s 50% Cocoa Block<br \/>\n250ml coconut cream<br \/>\n1 cup shredded\/desiccated coconut<br \/>\n3\/4 cup ground almonds <\/p>\n<p>Coatings<br \/>\n3\/4 cup pistachio nuts, processed or finely chopped<br \/>\n1 cup coconut blitzed with 1\/4 cup icing sugar<br \/>\n1\/4 cup cocoa or Cacao Powder<br \/>\n1 packet Fresh As freeze-dried raspberry or plum powder<\/p>\n<p>Method<br \/>\nWith a big sharp knife, chop the chocolate up into very small pieces (big lumps won\u2019t melt properly). Place it in a heatproof bowl.<br \/>\nHeat the coconut cream in a saucepan over a medium heat. Keep an eye on it and when it\u2019s just started simmering, pour it in over the chocolate pieces. Leave to sit for a few minutes, then lightly whisk until all the chocolate is melted and well combined, scraping the sides clean with a spatula.<br \/>\nStir through the almond and coconut, and leave in the fridge for a few hours until it\u2019s firmed up enough to roll.<br \/>\nUse a spoon to dig out little bits of mixture and roll into smooth balls. This works best with dry hands \u2013 you might need to wash and dry them a few times. It will get messy. Place the balls on a tray lined with baking paper and pop in the fridge for 10 minutes to firm up again.<br \/>\nTip the coatings in smallish bowls. Before coating each truffle, roll it again in your hand so the outside goes nice and sticky. Swirl it around in a bowl of coating and replace gently on the tray (use your hands for the pistachios or coconut if you need to).
