{"id":346,"date":"2014-01-09T19:15:55","date_gmt":"2014-01-09T06:15:55","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=346"},"modified":"2017-01-05T21:18:30","modified_gmt":"2017-01-05T08:18:30","slug":"roasted-red-pepper-hummus","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=346","title":{"rendered":"Roasted Red Pepper Hummus"},"content":{"rendered":"<p><strong>Roasted Red Pepper Hummus<\/strong><\/p>\n<p>2 x 425 gram can Chick Peas<br \/>\n3 &#8211; 4 Red Peppers (capsicum)<br \/>\n1\/3 cup lemon juice<br \/>\n2 Teaspoons Tahini (note, this can be quite strong, add less and taste perhaps)<br \/>\n4 cloves of Garlic (Minced)<br \/>\n3 Tablespoons Olive Oil<br \/>\n1 1\/2 teaspoons Ground Cumin<br \/>\nPinch of Cayenne Pepper<br \/>\n1\/2 to 1 teaspoon Salt<br \/>\n1 Packet of Basil Feta Cheese<\/p>\n<p>Take pips out of the peppers, and slice each pepper into 4 or 5. Roast the peppers under the grill until blackened.  When this is done place place them in a plastic sealed bag for about 10 Minutes.  They will steam through and make it easy for you to remove the skins.<\/p>\n<p>I used a stick mixer for the next step.<\/p>\n<p>Process Tahini and lemon juice for about 1 minute. Scrape the sides of the bowl down and process again for about 30 seconds.<\/p>\n<p>Add the oil, minced garlic, ground Cumin, Cayenne and Salt.  Process 30 seconds, scrape sides and 30 seconds more.<\/p>\n<p>Open the chick peas.  Rinse well and drain.  Add these to the other mix 1\/2 can at a time. Processing 1 &#8211; 2 minutes each time until thick and smooth.<\/p>\n<p>Add the skinned roasted red peppers and process again.<br \/>\nAdd the Feta and process again.<\/p>\n<p>Adjust all the seasonings to your own taste.
