Add the egg, vanilla, sugar and milk and beat till well mixed.<br \/>\nSift in flour, cocoa, baking soda, cream of tartar and salt.<br \/>\nUse extra cocoa for a darker colour and flavour.<br \/>\nWhisk or beat in very briefly, stop mixing as soon as all combined.<br \/>\nHeat a heavy saucepan or electric frypan. When hot rub surface with a little butter on papertowel.<br \/>\nDrop dessertspoon full of mixture off the tip of spoon.  Turn as soon as first bubbles appear on top.
