{"id":1407,"date":"2024-02-06T08:45:35","date_gmt":"2024-02-05T19:45:35","guid":{"rendered":"https:\/\/debskitchen.co.nz\/?p=1407"},"modified":"2026-03-02T11:31:04","modified_gmt":"2026-03-01T22:31:04","slug":"courgette-pineapple-relish","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=1407","title":{"rendered":"Courgette \\ Zucchini &#038; Pineapple Relish"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">4 &#8211; 6 Courgettes (diced, peeled if you think they need)<br>4 medium onions (diced)<br>1 and 1\/2 cups raw sugar<br>1 x 450 gram can crushed pineapple<br>2 cups apple cider vinegar or white vinegar<br>3 teaspoons of salt<br>2 teaspoons turmeric powder<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 tablespoons mustard seeds<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 Tablespoon Mustard Powder (for thickening)<br>1 tablespoon curry powder (for thickening)<br>8 &#8211; 10 teaspoons cornflour for thickening<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Boil Courgettes, Onions, Sugar Pineapple vinegar, salt, Mustard seeds and turmeric for \u00bd hour to 45 mins, until soft. Then I like to blend it with the stick mixer, so it is not too lumpy, and easier to spread.<br>Thicken with  cornflour. mustard powder and curry powder (mixed with a little vinegar). Add this to the mix and simmer again for 10 mins. You may need more thickening depending on consistency<br>Makes 6 small jars. Clean and sterilize jars. Simmer lids in pot of water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">NOTE:  Sometime I put Cucumbers in this as well if I have them around the garden. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">NOTE:  The Vinegar is an estimate.
