{"id":1092,"date":"2020-04-01T19:03:46","date_gmt":"2020-04-01T06:03:46","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=1092"},"modified":"2022-06-19T21:10:25","modified_gmt":"2022-06-19T09:10:25","slug":"penang-curry-crockpot-express-or-instant-pot","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=1092","title":{"rendered":"Penang Curry &#8211; Crockpot Express or Instant Pot"},"content":{"rendered":"<p><strong>Penang Curry &#8211; Crockpot Express or Instant Pot<\/strong><\/p>\n<ul>\n<p>Ingredients<br \/>\n2 to 3 Tbsp Panang curry paste ( I used 3 and it was on the hot side)<br \/>\n1 tsp  cumin powder<br \/>\n1 Can coconut milk<br \/>\n500 grams chicken breasts or thighs cut into bite-size pieces<br \/>\n2 Tbsp  fish sauce<br \/>\n1 Tbsp  brown sugar (or palm sugar)<br \/>\n2 tsp lime juice<br \/>\n2 Tbsp peanut butter<br \/>\n1 cup red and\/or green pepper sliced<br \/>\n1 cup green beans cut into pieces<br \/>\n1\/2 cup onion chopped<br \/>\n1 Tablespoon of lime leaves (I used bottled ones)<\/p>\n<p>Select \u2018Saute\u2019 on your pressure cooker and stir together Panang curry paste, cumin and 1\/2 can of coconut milk in the inner pot. until mixture is bubbly, about a minute or two.<\/p>\n<p>Press Cancel<\/p>\n<p>Stir in chicken and remaining coconut milk.<\/p>\n<p>Pressure Cook on high pressure for 4 minutes.<\/p>\n<p>Do a Quick Release of pressure and open the Pressure Cooker Pot.<\/p>\n<p>Stir in fish sauce, sugar, lime juice, peanut butter, pepper, beans, onion, and lime leaves.<\/p>\n<p>Select \u2018Saute\u2019 and cook until vegetables are crisp-tender, around 5 minutes. This cooks more once you stop it, so do not overcook<\/p>\n<p>Taste and adjust with more fish sauce, brown sugar, lime juice or peanut butter.<\/p>\n<p>Serve with Rice.<br \/>\nNotes<br \/>\nI would probably add less curry paste next time, but it was yum \ud83d\ude42<\/p>\n<p>You could swap the chicken out for cubed beef easily. I did the Beef for Pressure cook 35 mins.
