{"id":1084,"date":"2020-01-20T22:37:50","date_gmt":"2020-01-20T09:37:50","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=1084"},"modified":"2020-01-20T22:40:39","modified_gmt":"2020-01-20T09:40:39","slug":"whole-lemon-chicken-crockpot-express-or-instant-pot","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=1084","title":{"rendered":"Whole Lemon Chicken &#8211; Crockpot Express or Instant Pot"},"content":{"rendered":"<p><strong>Whole Lemon Chicken &#8211; Crockpot Express or Instant Pot<\/strong><\/p>\n<ul>\n<p>Ingredients<br \/>\n1.8 Kilo chicken<br \/>\n1 cup chicken broth<br \/>\n4 cloves garlic peeled and finely chopped<br \/>\n2 tsp salt<br \/>\n1\/4 tsp black pepper<br \/>\n1 tsp onion powder<br \/>\n1 tsp garlic powder<br \/>\n1 tsp paprika<br \/>\n1 sprig of rosemary leaves stripped and chopped<br \/>\n1 sprig of thyme leaves stripped and chopped<br \/>\n8 Tbsp butter melted<br \/>\n1\/2 lemon (squeeze 1 Tbsp juice and use same lemon to stuff chicken)<\/p>\n<p>For the Chicken Gravy:<br \/>\n3 Tbsp butter<br \/>\n3 Tbsp flour<\/p>\n<p>Instructions<\/p>\n<p>Pat dry inside and out of Chicken with paper towels. Place chicken breast-side-up, loosen the skin from the breast, using the back of a spoon to help. Set aside.<\/p>\n<p>In a small bowl combine: all of the seasonings, the minced rosemary and thyme and 1 Tbsp lemon juice 8 Tablespoons of melted butter. Stir to combine. Set aside.<\/p>\n<p>Place a rack in the inner pot of your instant pot and add 1 cup of chicken broth. Put in silicone sling or make a tinfoil one for under the chicken. Add chicken breast-side-up. Stuff the cavity of the chicken with crushed garlic cloves and half a lemon.<\/p>\n<p>Pour half the butter mixture under the skin, then spread the remaining butter mixture evenly over the top of the chicken.<\/p>\n<p>Pressure cook for 24 min with 15 min release, remove the chicken with your sling, allowing any excess juice to drip into the pot (keep that liquid for gravy).<\/p>\n<p>Transfer chicken to a baking dish, season with more salt and pepper and paprika then grill at 500\u02daF, until the skin is browned. Rest 10 minutes before slicing.<\/p>\n<p>To Make the Chicken Gravy:<br \/>\nPour all of the liquid from the pot into a bowl or measuring cup and skim off the excess fat at the top. You should have about 2 cups after straining off the fat.<\/p>\n<p>Set the instant pot to the saut\u00e9 function and melt in 3 Tbsp butter. Whisk in 3 Tbsp flour, whisking for 1 minute until golden. Add the remaining drippings and whisk until simmering and thickened then remove from heat. Serve with chicken.<\/p>\n<p>Notes:<br \/>\nCook your chicken on high pressure for 6 minutes per 450 grams, then do a natural pressure release for 15 minutes before releasing remaining pressure.<\/p>\n<p>This gravy is amazing and it makes lots.
