{"id":1006,"date":"2019-08-13T10:07:54","date_gmt":"2019-08-12T22:07:54","guid":{"rendered":"http:\/\/debskitchen.co.nz\/?p=1006"},"modified":"2019-08-13T10:37:20","modified_gmt":"2019-08-12T22:37:20","slug":"mons-keto-cookies","status":"publish","type":"post","link":"https:\/\/debskitchen.co.nz\/?p=1006","title":{"rendered":"Mon&#8217;s Keto Cookies"},"content":{"rendered":"<ul>\nMon&#8217;s Keto Cookies<\/ul>\n<p> &#8211; Ginger and Turmeric<\/p>\n<p><strong><\/p>\n<p>Ingredients<br \/>\n2 Tblsp coconut flour<br \/>\n\u00bd cup desiccated coconut<br \/>\n3 Tblsp sunflower seeds<br \/>\n2 Tblsp hemp seeds<br \/>\n2 tsp white chia seeds (I used black)<br \/>\n1 \u00bd tsp hulled tahini (I left this out)<br \/>\n\u00bd tsp baking soda with pinch sea salt<br \/>\n60g sesame seeds<br \/>\n55ml coconut oil<br \/>\n2 Tblsp maple syrup<br \/>\n50g xylitol (I used 1 sachet stevia)<br \/>\n\u00bc tsp vanilla powder (I used tsp vanilla extract)<br \/>\n\u00bd tsp ground turmeric<br \/>\n\u00bd to 1  tsp ground ginger<br \/>\n1 egg whisked<br \/>\nMethod<br \/>\n1\tPreheat oven to 160C or 140 fan forced. Line a baking tray with baking paper<br \/>\n2.\tPlace coconut flour, desiccated coconut, sunflower seeds, hemp seeds, chia seeds, tahini, baking soda and salt in a bowl and blitz with food processor to blend to a fine crumb.   Stir\tthrough sesame seeds and set aside.<br \/>\n3.\tMelt coconut oil in a saucepan over low heat, add maple syrup, xylitol, vanilla, turmeric and ginger. Stir to combine and simmer, then remove from heat and set aside.<br \/>\n4.\tAdd whisked egg to dry ingredients and stir to combine. Add in coconut oil mix and stir well until you have soft, sticky dough.<br \/>\n5.\tShape into small balls and gently press flat on the prepared tray. Bake for 25 min or until golden.
