Club Sandwiches
I know sandwiches sound easy, but its good to have the amounts you need to make a whole loaf up. These are really popular for a morning tea at work.
1 loaf of bread – I use white sandwich sliced. There is usually 21 slices of bread in one loaf. So you will get 28 small triangles or 21 soldiers if you cut into 3.
For 1 Loaf you will need:
8 slices of thinly sliced Meat. I usually use ham or Silverside
6 eggs
2 tomatoes
Lettuce
Mayonnaise
Pickle
Salt & Pepper
Curry Powder
Chives
Boil your eggs in shell for around 9 minutes. Run cold water over the shells when cooked. Peel egg shells off. Mash eggs with potato masher. Add about 1 teaspoon curry powder, mayonnaise to mix, chives and salt and pepper.
Lay your bread slices out on a flat surface in lines horizontally of 3. In the same order that they come out of the bag. (this makes the lids fit better)
Spread margarine on all three slices
Thinly spread a thin layer of pickle on your first 7 slices downwards.
Lay the meat on this
Pick up the slice of bread to the right of each one and place it upside down on top.

Spread the egg mixture on this
Place lettuce and two slices of very thinly cut tomato. Salt and Pepper
Spread the last slice of bread with mayonnaise, and place this lid on top.
I use an electric knife to cut these. I cut, place on a tray, and then cover the tray with a damp tea towel until you are ready to serve these.
I make the egg mix up at night and wash lettuce. And assemble in the morning
